Controlled Air-Dry
Hygienic wash; dry to target moisture for stability.
Product is dewatered (vibration/centrifuge), screened for foreign matter, and transferred to HEPA-filtered, temperature-and RH-controlled air tunnels or tray dryers.
Airflow, residence time, and bed depth are calibrated to protect color/aroma while reaching target moisture and water activity. In-process checks (LOD/moisture, aw), environmental monitoring, and lot records confirm release to downstream processing.
